Baked Cutlets

entree
  • Boneless chicken or veal, filleted (thin)
  • Progresso bread crumbs or a homemade mixture
  • Olive oil
  1. Put a cookie pan in the oven and heat to 350.
  2. Spread the bread crumbs on a wide plate.
  3. If you're making your own bread crumbs, crumble French or Italian bread in a blender and stir in any combination of pressed garlic, oregano, basil, and parmesan and salt.
  4. Rinse each cutlet in cold water, then press on the bread crumbs to coat, turn and press to coat the other side, and place on a clean plate.
  5. When all the cutlets are ready, take the pan out of the oven and spread a little olive or grapeseed oil on it. Put the cutlets on it and return to the oven.
  6. Bake at 350 for 15 minutes, until lightly browned on the bottom. Flip over to cook the other side.
  7. Serve as is, or layer with tomato sauce in a casserole, top with grated mozzarella and bake until the cheese melts to make chicken parmesan, or fill sub rolls with chicken and sauce to make chicken parm subs.
