Baked Cutlets

- Boneless chicken or veal, filleted (thin)
- Progresso bread crumbs or a homemade mixture
- Olive oil
- Put a cookie pan in the oven and heat to 350.
- Spread the bread crumbs on a wide plate.
- If you're making your own bread crumbs, crumble French or Italian bread in a blender and stir in any combination of pressed garlic, oregano, basil, and parmesan and salt.
- Rinse each cutlet in cold water, then press on the bread crumbs to coat, turn and press to coat the other side, and place on a clean plate.
- When all the cutlets are ready, take the pan out of the oven and spread a little olive or grapeseed oil on it. Put the cutlets on it and return to the oven.
- Bake at 350 for 15 minutes, until lightly browned on the bottom. Flip over to cook the other side.
- Serve as is, or layer with tomato sauce in a casserole, top with grated mozzarella and bake until the cheese melts to make chicken parmesan, or fill sub rolls with chicken and sauce to make chicken parm subs.
