Judy's Light Biscuits

  • 2 cups all-purpose flour
  • 2/3 cup milk
  • 3 tablespoons shortening
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  1. Sift together flour, baking powder and salt. Add shortening; stir in milk quickly with fork to make dough light and fluffy, but not sticky. Knead until dough is smooth, approx. 20 times. Roll out the dough on lightly floured board. Cut into biscuits 1/2 inch thick. Bake on greased cookie sheet at 450 degrees 12-16 minutes.
Judy notes that the original recipe calls for whole milk, but she never has that on hand and probably uses low fat or skim.
