Guacamole

  • 2 pitted and peeled avocados
  • 1 tablespoon grated or minced onion
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt
  • 1/4 teaspoon chili powder
  • 1/3 cup mayonnaise
  1. Mash avocados.
  2. Stir in the onion, lemon juice, salt, and chili powder.
  3. Spread the mayonnaise over the mixture, sealing to the edge of the bowl.
  4. Chill.
  5. At serving time, blend mayonnaise into the mixture..

Yield: 1 and 1/2 cups
