Orange Banana Walnut Muffins
- 2 old mushy bananas, mashed
- 2 eggs
- 1/3 cup butter
- 2/3 cup demerara sugar
- 1 and 1/2 cups flour
- 1 and 1/2 tsps baking powder
- 1/2 tsp salt
- 2 tablespoons of candied orange peel, minced
- 2 tablespoons of walnuts, crushed
- 1 tablespoon of Cointreau
- Line a muffin tin with papers and set aside. Set the oven to 350.
- Cream butter and sugar til fluffy.
- Beat eggs, then mix into butter and sugar. Stir in the bananas and Cointreau.
- Whisk the salt, baking powder and flour together, then add 1/3 at a time to the egg/butter/sugar mixture.
- Gently fold in the orange peel and walnuts.
- Fill muffin tins 2/3 full.
- Bake 25 minutes, or until the tops are lightly browned and a toothpick inserted in the middle of a muffin comes out clean.
