Orange Banana Walnut Muffins

  • 2 old mushy bananas, mashed
  • 2 eggs
  • 1/3 cup butter
  • 2/3 cup demerara sugar
  • 1 and 1/2 cups flour
  • 1 and 1/2 tsps baking powder
  • 1/2 tsp salt
  • 2 tablespoons of candied orange peel, minced
  • 2 tablespoons of walnuts, crushed
  • 1 tablespoon of Cointreau
  1. Line a muffin tin with papers and set aside. Set the oven to 350.
  2. Cream butter and sugar til fluffy.
  3. Beat eggs, then mix into butter and sugar. Stir in the bananas and Cointreau.
  4. Whisk the salt, baking powder and flour together, then add 1/3 at a time to the egg/butter/sugar mixture.
  5. Gently fold in the orange peel and walnuts.
  6. Fill muffin tins 2/3 full.
  7. Bake 25 minutes, or until the tops are lightly browned and a toothpick inserted in the middle of a muffin comes out clean.
