Roasted Potatoes With Rosemary

- 1 big potato cut into roughly 2" pieces (quarter, then half each quarter)
- 1 sprig fresh rosemary, minced
- olive oil
- salt
- Preheat oven to 450.
- Toss potatoes and oil on a cookie pan. Spread potato pieces so that they don't touch. (If they're too close together, they'll steam instead of roasting).
- Bake 10 minutes, or until potatoes are lightly browned on the bottom, then turn the potatoes with a spatula, and bake another 5 minutes or until the other side is lightly browned.
- Toss with rosemary and salt to taste and serve.
