Roasted Potatoes With Rosemary

  • 1 big potato cut into roughly 2" pieces (quarter, then half each quarter)
  • 1 sprig fresh rosemary, minced
  • olive oil
  • salt
  1. Preheat oven to 450.
  2. Toss potatoes and oil on a cookie pan. Spread potato pieces so that they don't touch. (If they're too close together, they'll steam instead of roasting).
  3. Bake 10 minutes, or until potatoes are lightly browned on the bottom, then turn the potatoes with a spatula, and bake another 5 minutes or until the other side is lightly browned.
  4. Toss with rosemary and salt to taste and serve.
