Potato Crust for Pot Pie or Casseroles

entree
  • 2 medium white potatoes
  • 1/2 tsp salt
  • 1 tsp baking powder
  • 1 egg
  • 2 tablespoons butter
  • flour (enough to make dough soft, about 1/2 cup)
  1. Nuke the potatoes 3 minutes each side and mash with a little milk, salt, pepper, and 2 tablespoons of butter.
  2. Combine the rest of the ingredients in the order given.
  3. Roll to about desired thickness, 1/8 or 1/4".
  4. Put a filling (turkey, chicken, beef...) in a 9" pie plate. Put crust on top.
  5. Bake 30 minutes at 350 or until lightly browned.
