Fresh Corn Quesadillas

  • 8 corn tortillas
  • Kernels sliced off 1 fresh ear of corn
  • 1 fresh hot (to taste) red pepper, seeds discarded, minced
  • 1/2 cup Cheddar, grated or sliced
  • Optional: leftover cooked beans, chicken, beef, or turkey
  1. Put a tortilla in a frying pan over a medium heat. Sprinkle 1/4 of the corn, pepper, and cheddar on it,
  2. leaving a 1/2 margin around the edges. Top with another tortilla, cook for 3 minutes, then flip and cook for another 3 minutes. The tortillas should be slightly browned. Repeat for the other tortillas.
