Fresh Corn Quesadillas

- 8 corn tortillas
- Kernels sliced off 1 fresh ear of corn
- 1 fresh hot (to taste) red pepper, seeds discarded, minced
- 1/2 cup Cheddar, grated or sliced
- Optional: leftover cooked beans, chicken, beef, or turkey
- Put a tortilla in a frying pan over a medium heat. Sprinkle 1/4 of the corn, pepper, and cheddar on it,
- leaving a 1/2 margin around the edges. Top with another tortilla, cook for 3 minutes, then flip and cook for another 3 minutes. The tortillas should be slightly browned. Repeat for the other tortillas.
