Tabouli

entree
  • 1/2 cup bulgar
  • 1 cup boiling water
  • 1/4 tsp salt
  • 1/2 cup minced onion
  • 1 or 2 big ripe tomatoes, chopped
  • 1/4 cup olive oil
  • juice of 1 lemons (may need more)
  • 1/4 cup minced parsley (may need more)
  1. Pour boiling water over bulgar. Let sit 10-15 minutes. If there's a lot of water still visible after 15 minutes, drain most of it off.
  2. Stir in all the other stuff. Add salt and pepper and additional lemon juice and parsley to taste.
  3. Refrigerate 1/2 hour or so, stir, and serve with pita bread.
