Tabouli

- 1/2 cup bulgar
- 1 cup boiling water
- 1/4 tsp salt
- 1/2 cup minced onion
- 1 or 2 big ripe tomatoes, chopped
- 1/4 cup olive oil
- juice of 1 lemons (may need more)
- 1/4 cup minced parsley (may need more)
- Pour boiling water over bulgar. Let sit 10-15 minutes. If there's a lot of water still visible after 15 minutes, drain most of it off.
- Stir in all the other stuff. Add salt and pepper and additional lemon juice and parsley to taste.
- Refrigerate 1/2 hour or so, stir, and serve with pita bread.
