Cranberry Juice with Honey

- A bag of frozen cranberries
- 2-5 cups water, to taste
- 1/4 cup honey, to taste
- 1-2 tablespoons demarara sugar (or cane), to taste
- Bring 2 cups of water to boil, add cranberries (rinsed if there's any freezerburn), and boil until skins pop.
- Pulse a few times in a food processor, then sieve the liquid back into the cooking pot. Press with a spoon to get most of the liquid out. It will be thick.
- Set aside the pulp (later, use it for Cranberry Toast).
- Heat the liquid and stir in the honey, then the sugar, to taste. Cook a few minutes more, til fully dissolved. The mixture will probably be very dense. Drink it as is, or dilute it to taste with water just before drinking, or add a few tablespoons to flavor OJ. If you have a cold, drink it hot.
