Cranberry Juice with Honey

  • A bag of frozen cranberries
  • 2-5 cups water, to taste
  • 1/4 cup honey, to taste
  • 1-2 tablespoons demarara sugar (or cane), to taste
  1. Bring 2 cups of water to boil, add cranberries (rinsed if there's any freezerburn), and boil until skins pop.
  2. Pulse a few times in a food processor, then sieve the liquid back into the cooking pot. Press with a spoon to get most of the liquid out. It will be thick.
  3. Set aside the pulp (later, use it for Cranberry Toast).
  4. Heat the liquid and stir in the honey, then the sugar, to taste. Cook a few minutes more, til fully dissolved. The mixture will probably be very dense. Drink it as is, or dilute it to taste with water just before drinking, or add a few tablespoons to flavor OJ. If you have a cold, drink it hot.
