Uncream of Broccoli Soup

  • 3 tbsp butter or olive oil
  • a little more butter for serving
  • 1 package frozen broccoli or equivalent fresh, chopped
  • 2 medium potatoes, cut into 1/4" cubes
  • 1 big onion
  • 3 cups water or broth
  • a few sprigs parsley, chopped (optional)
  1. Saute the onion and potatoes in the butter/oil for 4 minutes.
  2. Add a few pinches of salt and pepper and stir in the broccoli.
  3. Add the water or broth, bring to a boil, and then simmer until the potatoes are tender, about 20 minutes.
  4. Puree.
  5. Add salt and pepper to taste.
  6. Serve with a sprinkling of parsley and a pat of butter on top of each bowl.
