Uncream of Broccoli Soup

- 3 tbsp butter or olive oil
- a little more butter for serving
- 1 package frozen broccoli or equivalent fresh, chopped
- 2 medium potatoes, cut into 1/4" cubes
- 1 big onion
- 3 cups water or broth
- a few sprigs parsley, chopped (optional)
- Saute the onion and potatoes in the butter/oil for 4 minutes.
- Add a few pinches of salt and pepper and stir in the broccoli.
- Add the water or broth, bring to a boil, and then simmer until the potatoes are tender, about 20 minutes.
- Puree.
- Add salt and pepper to taste.
- Serve with a sprinkling of parsley and a pat of butter on top of each bowl.
