Stuffing Soup

- 2-3 tbsp olive oil
- 1 cup onion, coarsely chopped
- 1 cup celery, chopped
- 1 carrot, sliced
- 1 clove garlic, minced (optional)
- 4 oz (about 4-5) mushrooms, chopped (optional)
- 1/2 to 2/3 cup rice (medium grain white, or adjust for other kinds)
- 6-8 cups Shelton's chicken broth and/or water
- 1/2 tsp Bell's Seasoning
- 1/4 tsp sage (or marjoram)
- 1/2 tsp salt (skip it or add to taste if the broth is salty)
- 2 cups cooked turkey or chicken
