Spinach Sautéed With Garlic and Pignoli

  • 1 pound fresh spinach (preferably the flat kind)
  • 3 cloves garlic, sliced
  • 3 tbsp pignoli (pine nuts)
  • 1 tbsp olive oil
  1. Wash the spinach and drain.
  2. Put in a wide frying pan with the garlic and cook over high heat just until the spinach is wilted and most of the water has evaporated (about 3 minutes).
  3. Stir in the olive oil and pignoli and cook 1 minute. Stir. The pignoli should be light brown on one side.
  4. Salt to taste and serve.
