Spinach Sautéed With Garlic and Pignoli

- 1 pound fresh spinach (preferably the flat kind)
- 3 cloves garlic, sliced
- 3 tbsp pignoli (pine nuts)
- 1 tbsp olive oil
- Wash the spinach and drain.
- Put in a wide frying pan with the garlic and cook over high heat just until the spinach is wilted and most of the water has evaporated (about 3 minutes).
- Stir in the olive oil and pignoli and cook 1 minute. Stir. The pignoli should be light brown on one side.
- Salt to taste and serve.
