Spinach Squares

- 1 lb fresh spinach
- 1 heaping tbsp minced onion
- 4 tbsp butter
- 1 cup sifted flour (if not sifted, wisk before measuring)
- 1 tsp baking powder
- 4 oz cheddar, microplaned
- pinch nutmeg
- 1/2 tsp salt
- a few grindings pepper
- 1 cup milk
- 2 eggs
- Set the oven to 350. Put the butter in a 9" baking dish in the oven to melt.
- Blanche spinach in lots of boiling salted water for 30 seconds. Drain. Add to the melted butter and chop (or chop and then add if you can't chop in the baking dish). Stir in the onion.
- Whisk together the flour and baking powder.
- Whisk eggs, then add milk, salt, nutmeg, and flour mixture.
- Fold in the cheese and then the spinach (leaving a little butter in the pan).
- Pour into the baking dish and bake 35 minutes.
