Spanish Rice
entree
- 4 tbsps oil (grapeseed, olive, whatever)
- 1 can kidney beans
- 1 cup canned tomatoes
- 1 medium onion
- 2 cloves garlic
- 1 green pepper
- 2 scant teaspoons chili powder
- 1/8 tsp hot pepper flakes
- a pinch of thyme (optional)
- 1/2 tsp salt
- 1 cup long grain white rice (should take about 20 minutes to cook)
- Saute garlic, onion, and green pepper over a medium-low heat for a few minutes.
- Add the rice and spices and stir for a minute.
- Stir in the beans and tomatoes and simmer til done.
