Spanish Rice

entree
  • 4 tbsps oil (grapeseed, olive, whatever)
  • 1 can kidney beans
  • 1 cup canned tomatoes
  • 1 medium onion
  • 2 cloves garlic
  • 1 green pepper
  • 2 scant teaspoons chili powder
  • 1/8 tsp hot pepper flakes
  • a pinch of thyme (optional)
  • 1/2 tsp salt
  • 1 cup long grain white rice (should take about 20 minutes to cook)
  1. Saute garlic, onion, and green pepper over a medium-low heat for a few minutes.
  2. Add the rice and spices and stir for a minute.
  3. Stir in the beans and tomatoes and simmer til done.
