Roasted Delicata Squash with Seeds and Cranberries

- 1 delicata squash
- a handful of cranberries
- Preheat the oven to 375.
- Cut the squash in half. Scoop out the seeds and stringy stuff. Discard the stringy stuff, but save the seeds.
- Cut the squash into 1/2" cubes.
- Toss the cubes, seeds, and cranberries in a tiny bit of oil, and arrange without crowding on a cookie pan.
- Roast about 20 minutes or til lightly browned. Stir, add salt and pepper to taste, and roast 5 minutes more.
