Roasted Delicata Squash with Seeds and Cranberries

  • 1 delicata squash
  • a handful of cranberries
  1. Preheat the oven to 375.
  2. Cut the squash in half. Scoop out the seeds and stringy stuff. Discard the stringy stuff, but save the seeds.
  3. Cut the squash into 1/2" cubes.
  4. Toss the cubes, seeds, and cranberries in a tiny bit of oil, and arrange without crowding on a cookie pan.
  5. Roast about 20 minutes or til lightly browned. Stir, add salt and pepper to taste, and roast 5 minutes more.
