Oatmeal-Walnut Apple Betty

  • 1/3 cup old fashioned rolled oats, processed in blender til finely ground
  • 1/2 cup oats
  • 1/4 cup walnuts, chopped in blender
  • 1 and 1/4 tsp cinnamon
  • 1/4 tsp allspice
  • pinch nutmeg
  • 3 tblsp sugar
  • 3 Tblsp cold butter
  • Apples, peeled and sliced, enough to fill a pie pan
  1. Preheat oven to 350 degrees F.
  2. Toss apples with orange juice as you add them to the pie pan. At the end, toss with a tablespoon or so of cinnamon sugar.
  3. Mix oats, walnuts, spices and sugar in a mixing bowl. Mix with pastry blender or fingers until pea-size clumps form.
  4. Top apples with oat mixture and bake until bubbly and apples are tender, 20 to 25 minutes.
