Green Peppers with Italian Bread Stuffing

- 1 green peppers, sliced lengthwise along ridges
- 1-2 slices white bread, crumbled
- 2 or more cloves garlic, pressed or minced
- 1-3 tablespoons of olive oil, to moisten
- a tablespoon of parsley, chopped
- 1/4 cup finely grated Parmesan (optional)
- 1/8 tsp. salt
- pepper, to taste
- Mix everything except the green peppers in a bowl.
- Arrange green peppers on a cookie pan.
- Spoon the bread mixture into the peppers, pressing lightly.
- Bake at 350 or broil or until lightly browned.
