Green Peppers with Italian Bread Stuffing

  • 1 green peppers, sliced lengthwise along ridges
  • 1-2 slices white bread, crumbled
  • 2 or more cloves garlic, pressed or minced
  • 1-3 tablespoons of olive oil, to moisten
  • a tablespoon of parsley, chopped
  • 1/4 cup finely grated Parmesan (optional)
  • 1/8 tsp. salt
  • pepper, to taste
  1. Mix everything except the green peppers in a bowl.
  2. Arrange green peppers on a cookie pan.
  3. Spoon the bread mixture into the peppers, pressing lightly.
  4. Bake at 350 or broil or until lightly browned.
